Making a sauce is a prime way to elevate the flavor of a meal, and a chimichurri sauce is a great option. This traditionally Argentinean sauce is made with a blend of herbs mixed with red wine vinegar and olive oil. There are red and green versions, so I’ll be focusing on the green variety with this chimichurri sauce recipe. The recipe is quick and simple to throw together, adding a punch of flavor to your life.

A Twist on a Classic Chimichurri Sauce Recipe
Of course, not all chimichurri sauce is the same. My own unique take includes bone broth, which adds a lot of flavor and health benefits. Did you know that bone marrow broth improves the health of your digestive system, bones, immune system and other parts of your body? The other twist I use is to add the herb thyme in favor of the oregano that’s usually included. I think thyme adds a nice earthiness and aroma, and it pairs well with meat. Otherwise, I use the traditional flavors of garlic, red pepper flakes and parsley in addition to the oil and vinegar base.
Food Pairings for a Bold Sauce
Generally, you would pair this sauce with steak, but it’s perfectly fine to use it to liven up other cuts of beef, chicken or fish. I like to use it with a Dijon and herb-rubbed rib roast, as well as with steak and other dishes. Chimichurri sauce is usually used for grilling meats, although it’s versatile enough to use as a marinade, seasoning or sauce with food you’re pan cooking, roasting or cooking with other methods.

Ingredients

- 1 cup lightly packed fresh parsley
- 2 large cloves garlic
- 1 teaspoon dried thyme
- 1/4 teaspoon red pepper flakes
- 1/4 cup beef bone broth
- 1/4 cup organic red wine vinegar
- 1/4 cup extra-virgin olive oil
- 1/2 teaspoon salt
- 1/8 teaspoon freshly ground black pepper
Instructions
- Place all ingredients in a food processor, blend for about 30 seconds or until all ingredients are combined well.
- Pour the chimichurri sauce into an 8-oz mason jar. Cover and store in the fridge for up to 2 weeks.
